New Cow-free Milk is Based on Beer Brewing and 3D Printing

Ryan and Perumal are two cheese lovers. They said that they couldn't imagine living without dairy products, so they created Perfect Day, a cow-free milk, based on 3D printing technology. It's vegan, safer, sustainable, delicious and more nutritious than factory made dairy products. Also, it has the same delicious cow’s milk taste and texture.

The production process is deeply connected with old-school craft brewing systems. They make almost the same cow milk proteins, which are casein and whey, by using a 3D bio-printer. This is done through printing bovine DNA sequences and adding them into the yeast, then using old fermentation techniques.

The cow-free milk, Perfect Day, is also produced in a more eco-friendly way. As they describe on their website, the product needs approximately 91% less land, 84% less greenhouse gas emissions, 65% less energy and 98% less water than typical industrial dairy productions.

Perfect Day is also lactose-free, 100% gluten free and contains no rye, wheat, or barley. It also is includes vitamins and minerals and healthy plant fats, familiar to the human body. If you have lactose or gluten intolerance problems, this product might be what you are looking for. The product also doesn’t include cholesterol and is 100% free of animal fats.

They have created a type of yeast that produces milk proteins through genetic engineering miracles. They describe the developing process on their website, in these words:

“We received a standard yeast from the USDA to ensure that it was safe and well-understood. In this stage, this yeast doesn’t do anything: it’s like a blank CD. We gave this yeast a “blueprint” that allows it to ferment sugar and create real milk proteins. This is the very same blueprint, in the form of DNA that cows use every day. Our yeast, which we lovingly call Buttercup, is now a milk protein-making machine that’s 100% food-safe.

Our proteins are made in a process akin to craft brewing, using fermentation (we call it “yeast farming”). This process is much cleaner and more resource-efficient than animal farming, and it’s the cornerstone of our new approach to dairy.”

Perfect Day is designed to be chemical-free and it doesn’t include hormones either. However, it has all the same vitamins and minerals as the cow milk does, like Omega-3, calcium, vitamin D and other nutrients.

The product is not in the market for now. They are planning to start selling it after the product perfectly captures the best delicious taste and texture, likely by late 2017. However, if you live around Berkley CA, they say that you are welcome to drop by and taste some samples.

If you are curious about the brand's name, they explain that Ryan and Perumal discovered that dairy cows who listen to soothing music like the Lou Reed song 'Perfect Day' are calmer, happier, and produce more milk.
